A colleague has an allotment and had some spare rhubarb. It’s not as easy to organise when we’re not all in an office together, but he managed to get a bag over to me. Ages ago, I spotted a rhubarb based recipe in the National Trust book of scones and so the recipe had to be tried. I think they could have taken a little more rhubarb, but other than that, they’re really light and fluffy and worked well.
