I tried a new recipe this week for these crunchy nut and seed rounds from Nadia’s Healthy Kitchen.

They were super easy to make, and the texture is lovely. They are slightly chewy but stay satisfyingly crunchy as well.

The recipe is written for a batch of eight, which is exactly what I got. However, next time I think I will scale the recipe up to twelve. I have moulds for twelve, so it would make much more sense to fill the whole tray and make better use of the oven time.
