We met some friends for a walk yesterday and they presented us with a bag of apples - I can’t remember the variety but I know she said they were good for both eating and baking. So I decided to get Claude to help me adjust the tried and tested loaf recipe into an apple based one. This is how it came out. It looks and tastes great.

The key additions were:
• 1½ tsp ground cinnamon
• ¼ tsp nutmeg
• 150-180g apple (after peeling and coring), diced into 5mm cubes

One helpful tip was to use a tablespoon or so of the oat flour to coat the apple pieces so that they all sink to the bottom of the cake. This worked well.
