I prepared a loaf on Friday for Saturday morning baking, and then the same for a Sunday morning bake.

Saturday’s loaf was half malthouse flour, half white flour, both rolled in pumpkin, sunflower, linseed and chia seeds, and with a handful of those same seeds thrown in.

Sunday’s loaf was the same flour mix, but with chopped walnuts inside, with a bit of honey, and rolled in sunflower, linseed and chia seeds. It spread out on its final prove and didn’t keep any form of shape.

I need to work on shaping the loaves. But both taste great. I hadn’t necessarily planned to make one each day, but we scoffed most of the first one on Saturday when it was fresh out of the oven!
