This was a fantastic dessert. I had it at The Ginger Pig when we were there on Monday for a wedding reception. It is a “Mango & pistachio trifle with passionfruit sorbet” and was beautifully balanced with incredible flavours. Eating it made all of my other senses dull a little. It felt like I was in a bubble. I could hear the conversation going on around me, but I was away from it — quite the experience.
