So I told ChatGPT, “I’d like a recipe using lemon curd that scores well on a Zoe diet” (I’d already clarified that it knew what I meant by a Zoe diet). It came up with the idea for this, which we had as a breakfast but would work equally well as a dessert. I adjusted the quantities to suit our tastes and what we had available, but the base of this was AI suggested. I’ll make this again.

Ingredients (Serves 2)
- 120g full-fat Greek yogurt
- 2 tablespoons chia seeds
- 60ml unsweetened plant-based milk
- 2 tablespoons lemon curd
- 50g mixed berries (raspberries and/or blackberries)
- 1 tablespoon chopped mixed nuts
- 0.5 teaspoon ground flaxseeds

Instructions
1. Prepare Chia Pudding: In a bowl, mix chia seeds with almond milk. Stir well and let sit for 10 minutes, then stir again. Refrigerate for at least 2 hours or overnight until thickened.
2. Layer the Parfait:
- In a glass or jar, add a layer of Greek yogurt.
- Add a layer of chia pudding.
- Spoon in 1 tbsp lemon curd per serving.
- Top with berries, crushed nuts, and flaxseeds
3. Optional Sweetener: If needed, drizzle with a small amount of honey or maple syrup (though the natural sweetness of the berries and lemon curd should be enough).

I’ve since successfully used more of the lemon curd in porridge and overnight oats.
