My second go at these muffins but this time using stilton and cauliflower instead of cheddar and broccoli. Mainly because of what I had in the fridge. Not as pleasing in terms of having a lovely domed top this time, but great in terms of flavour.

Next up was some cookie baking following another recipe from the same site. I was a bit impatient and didn’t allow the butter to soften enough which is why there are some gaps in the cookies. I also didn’t have any powdered sweetener to hand so swapped in sugar instead. I’m not on a keto diet and they still scored well enough on Zoe with this substitution so it seemed like it’d work out ok. And they taste great. A nice subtle flavour - kind of shortbready.
