Today’s bake: White chocolate, stem ginger and rhubarb cookies
Even after making yesterday’s scones, I still had some rhubarb left. So I decided to bake these white chocolate, stem ginger and rhubarb cookies. They weren’t the nicest consistency to work with as they were pretty sticky and awkward to shape into balls. But they baked well, spread out nicely, and I think that the colour of the rhubarb is pretty. Oh, and they taste great as well.
