Based on this recipe but with a few adjustments. I swapped half of the butter for olive oil and used sugar instead of sweeteners. For the coating, I changed the amount and ratio of the cinnamon sugar using two tablespoons of sugar to 1 teaspoon of cinnamon. This was about the right amount of sugar coating, but it could have taken half a teaspoon more cinnamon.

I’ve made snickerdoodles once before and remember them fondly. I’m pleased to have found a new recipe to try out.
