I followed the same basic recipe that has been so verstile over the past year, but today I mixed in the zest from a large lime and 30g of desiccated coconut. I also added an extra tablespoon of coconut sprinkled on top. It was a good bake. Next time I might use the zest of one and a half limes, as they could probably handle a bit more of a citrus kick without being overpowering.
