Today’s bake: Fudgy date brownies
As preparation for the kitchen replacement next month, I’ve been looking closely at various packets in different cupboards and discovered two packets of dates that are good until the end of April. I made date and walnut porridge the other day, which was great but barely made a dent in the date mountain, so I needed a date-based recipe.
I found this date brownie recipe and decided to give it a go. I skipped the frosted topping and used melted chocolate instead. My baking tray is 9 x 9 inches rather than the recommended 8 x 8, so they turned out thinner than in the recipe. I adjusted the baking time accordingly but might have gone a bit too short as they’re very soft. Great as a dessert eaten with a fork and frozen cherry yoghurt though!
