This week I didn’t have a pre-set idea of what scones I wanted to make. Instead, I took inspiration from what leftovers I had in the fridge. I found feta. And a quick search of t’internet turned up this recipe. I didn’t have any black olives available, so I added a few extra sun-dried tomatoes instead. They were good and light and had a well-balanced flavour. Definitely, something to come back to again when I have leftover feta.
