I did a freezer audit yesterday to get an idea of what we need to get through before the kitchen install happens. I found some bananas that I’d rescued and frozen many months ago, so I searched out the banana bread recipe I remembered baking not long after the start of my Zoe journey. I checked my notes and added dark chocolate again, and this time topped it with pecans for a bit of extra crunch. The result was a lovely, moist loaf full of flavour.
