I’ve filled another notebook, so time to write up my most recent adventures in granola making. I seem to have standardised on a base recipe, so here it is:

  • 400g oats
  • 160g nuts (I use cashews and almonds)
  • 130g seeds (I use pumpkin, sunflower, and then a smaller seed like chia or linseed)
  • 1 1/2 tsp cinnamon
  • 3/4 tsp cardamom
  • 1/2 tsp salt
  • 2 tbsp coconut oil
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 8 tbsp syrup (I usually use mostly maple syrup, and a bit of agave as I have it around and it needs using up)


All the dry ingredients go into a bowl and get mixed before being put onto a baking sheet. All the wet ingredients go into a bowl over a pan of boiling water to melt and combine gently. Once the wet ingredients are melted and combined, I pour them onto the baking sheet and mix the wet and dry. And then I put it into the oven at 150 degrees C for 40 to 45 minutes, stirring at 10-minute intervals until it looks golden and the nuts have a crispness to them.

I’ve been enjoying eating my morning granola with seasonal fresh fruit - this morning it is strawberries, and cherries - and oat milk.
